Yesterday, the weather was warm so, I went for a long walk with Jimmy and Molly around the neighborhood.  It was good to be outside in the warm air. The walk took about an hour.  We didn't go very fast but when we got back to the house my heart rate was fast so I think it did some good!  I wanted to walk again today but the weather is back to being yucky and cold so I will probably just do a  walking tape or something.

I am making baked Tilapia for dinner tonight and some sautéed  zucchini and squash to go with it. I also probably make some rice as well.  I usually sauté the Tilapia in a little butter, olive oil and red wine vinegar but this time I wanted to try baking it. So will see if it comes out as good.

I always seem to eat a pretty healthy dinner.  I need to start paying attention to what I eat for breakfast and lunch.  I was looking online for some healthy (but tasty) options for the first two meals of the day.  I did find a pretty yummy recipe for a chicken salad sandwich.

Chicken Salad Sandwich:

Ingredients:

Chicken (Cooked and shredded or cubed, however much you want depending on how much you want to make)
Pita Bread ( or Some kind of whole wheat bread)
Onions (I like to use about a quarter of one diced up really good)
Olives (If you want...I like it)
Tomatoes (Sliced or diced)
Mayonaise (Light...I tried fat free and it tasted like glue)
Salt
pepper


1. Cook the chicken way ahead of time.  It needs to be cold otherwise you will have a liquid mess
2. Mix all the ingredient together
3. Stuff into pita bread
4. Enjoy

I packed to sandwich for lunch at school with Molly and I loved it.

What is wrong with me!!

I gave up carbonated beverages of all kinds (including diet).  I started on the second of Jan.  I did great till about the 20th when I took a trip to the grocery store and found myself on the isles with the all the soda.  It was as if they were calling to me. I couldn't resist and I ended up with a cart full of soda.  I bought 3 2 liter bottles  and all three of them were gone by the end of the next day.  Grrr.....Why do I loves soda so much!!!!
